Keto Chocolate Chunk Cookies[edit | edit source]
Keto Chocolate Chunk Cookies are a delicious, low-carb dessert option for those following a Ketogenic diet. They are made with almond flour, unsweetened chocolate chunks, and a sugar substitute to keep them keto-friendly.
Ingredients[edit | edit source]
- 1 1/2 cups of Almond flour
- 1/2 cup of Butter, softened
- 1/2 cup of Erythritol or other keto-friendly sweetener
- 1 Egg
- 1 teaspoon of Vanilla extract
- 1/2 teaspoon of Baking soda
- 1/4 teaspoon of Salt
- 3/4 cup of unsweetened Chocolate chunks
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, erythritol, baking soda, and salt.
- In a separate bowl, beat the softened butter until creamy. Add the egg and vanilla extract, and continue to beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.
- Fold in the chocolate chunks.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
