Keto Zucchini Pizza Boats with Goat Cheese is a delicious and healthy alternative to traditional pizza. It's a perfect dish for those following a keto diet as it's low in carbs and high in fats.
Ingredients[edit | edit source]
- 4 medium zucchinis
- 1 cup marinara sauce
- 1 cup goat cheese, crumbled
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1/2 cup pepperoni, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste

- Preheat your oven to 400 degrees F (200 degrees C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a boat.
- Brush the zucchini boats with olive oil and season with salt and pepper.
- Spread a layer of marinara sauce in each zucchini boat.
- Sprinkle the goat cheese, mozzarella, and parmesan over the marinara sauce.
- Top with pepperoni slices.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
