Low Carb Italian Stuffed Bell Peppers with Ground Turkey[edit | edit source]
Ingredients[edit | edit source]
- 4 Bell peppers
- 1 lb Ground turkey
- 1 cup Cauliflower rice
- 1 cup Mozzarella cheese
- 1/2 cup Parmesan cheese
- 1 Onion, finely chopped
- 2 cloves Garlic, minced
- 1 can Tomato sauce
- 1 tsp Italian seasoning
- Salt and Pepper to taste
- Olive oil for cooking
Instructions[edit | edit source]
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
- Add the ground turkey to the skillet and cook until browned. Drain any excess fat.
- Stir in the cauliflower rice, tomato sauce, Italian seasoning, salt, and pepper. Cook for a few more minutes until everything is well combined.
- Remove the skillet from the heat and stir in half of the mozzarella and parmesan cheese.
- Stuff the bell peppers with the turkey and cauliflower rice mixture. Place the stuffed peppers in a baking dish.
- Sprinkle the remaining cheese on top of the stuffed peppers.
- Bake for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
