Low Carb Italian Stuffed Bell Peppers with Ground Turkey[edit | edit source]

Instructions[edit | edit source]

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Set aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
  4. Add the ground turkey to the skillet and cook until browned. Drain any excess fat.
  5. Stir in the cauliflower rice, tomato sauce, Italian seasoning, salt, and pepper. Cook for a few more minutes until everything is well combined.
  6. Remove the skillet from the heat and stir in half of the mozzarella and parmesan cheese.
  7. Stuff the bell peppers with the turkey and cauliflower rice mixture. Place the stuffed peppers in a baking dish.
  8. Sprinkle the remaining cheese on top of the stuffed peppers.
  9. Bake for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
