Roasted Cauliflower Mash is a delicious, low-carb alternative to mashed potatoes that fits perfectly into a keto diet. It's creamy, flavorful, and easy to make.

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cauliflower florets and minced garlic with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast the cauliflower in the preheated oven for about 25-30 minutes, or until golden and tender.
  4. Transfer the roasted cauliflower and garlic to a food processor. Add the cream cheese, Parmesan cheese, and butter.
  5. Process until smooth and creamy. Adjust the seasoning if necessary.
  6. Serve the roasted cauliflower mash garnished with chopped chives.
