Roasted Cauliflower Mash is a delicious, low-carb alternative to mashed potatoes that fits perfectly into a keto diet. It's creamy, flavorful, and easy to make.
Ingredients[edit | edit source]
- 1 large cauliflower head, cut into florets
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup cream cheese
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons butter
- Fresh chives, chopped (for garnish)
Instructions[edit | edit source]
- Preheat your oven to 400°F (200°C).
- Toss the cauliflower florets and minced garlic with olive oil, salt, and pepper. Spread them out on a baking sheet.
- Roast the cauliflower in the preheated oven for about 25-30 minutes, or until golden and tender.
- Transfer the roasted cauliflower and garlic to a food processor. Add the cream cheese, Parmesan cheese, and butter.
- Process until smooth and creamy. Adjust the seasoning if necessary.
- Serve the roasted cauliflower mash garnished with chopped chives.
