This is a delicious and hearty keto friendly recipe for Tomato Basil Parmesan Soup. It's perfect for those cold winter nights or when you're just in the mood for a comforting bowl of soup.
Ingredients[edit | edit source]
- 2 cups fresh tomatoes, diced
- 1 cup fresh basil leaves, chopped
- 1 cup parmesan cheese, grated
- 1 cup heavy cream
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until they are soft and fragrant.
- Add the tomatoes, basil, chicken broth, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Use a blender or immersion blender to puree the soup until it is smooth. Return the soup to the pot and stir in the parmesan cheese and heavy cream.
- Let the soup simmer for another 10 minutes, then serve it hot with a sprinkle of extra parmesan cheese on top.
