Tomato Basil Parmesan Soup[edit | edit source]

This is a delicious and hearty keto friendly recipe for Tomato Basil Parmesan Soup. It's perfect for those cold winter nights or when you're just in the mood for a comforting bowl of soup.

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until they are soft and fragrant.
  2. Add the tomatoes, basil, chicken broth, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  3. Use a blender or immersion blender to puree the soup until it is smooth. Return the soup to the pot and stir in the parmesan cheese and heavy cream.
  4. Let the soup simmer for another 10 minutes, then serve it hot with a sprinkle of extra parmesan cheese on top.
