A delightful, keto-friendly dessert, Almond Lemon Sandwich Cakes are a perfect treat for those following a keto diet.

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the eggs, melted butter, lemon zest, and lemon juice.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Drop spoonfuls of the batter onto the prepared baking sheet, flattening each one slightly with the back of the spoon.
  6. Bake for 10-12 minutes, or until the edges are golden brown.
  7. While the cakes are baking, beat together the cream cheese and heavy cream until smooth.
  8. Once the cakes have cooled, spread the cream cheese mixture on half of them, then top with the remaining cakes to form sandwiches.
