A delightful, keto-friendly dessert, Almond Lemon Sandwich Cakes are a perfect treat for those following a keto diet.
Ingredients[edit | edit source]
- 2 cups of almond flour
- 1/2 cup of erythritol
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 3 large eggs
- 1/2 cup of butter, melted
- 1 tablespoon of lemon zest
- 2 tablespoons of lemon juice
- 1/2 cup of cream cheese, softened
- 1/4 cup of heavy cream
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, melted butter, lemon zest, and lemon juice.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Drop spoonfuls of the batter onto the prepared baking sheet, flattening each one slightly with the back of the spoon.
- Bake for 10-12 minutes, or until the edges are golden brown.
- While the cakes are baking, beat together the cream cheese and heavy cream until smooth.
- Once the cakes have cooled, spread the cream cheese mixture on half of them, then top with the remaining cakes to form sandwiches.
