Keto BBQ Pulled Pork and Cornbread Waffles[edit | edit source]
Ingredients[edit | edit source]
- Pork shoulder (2 lbs)
- BBQ sauce (sugar-free, 1 cup)
- Chicken broth (1 cup)
- Garlic (minced, 2 cloves)
- Onion (1, chopped)
- Salt (1 tsp)
- Pepper (1/2 tsp)
- Almond flour (1 cup, for waffles)
- Coconut flour (1/4 cup, for waffles)
- Eggs (4, for waffles)
- Butter (melted, 1/4 cup, for waffles)
- Baking powder (1 tsp, for waffles)
- Cheddar cheese (shredded, 1/2 cup, for waffles)
Instructions[edit | edit source]
- Season the pork shoulder with salt and pepper.
- Place the pork shoulder, chopped onion, minced garlic, chicken broth, and sugar-free BBQ sauce in a slow cooker.
- Cook on low for 8 hours or high for 4 hours.
- Once cooked, shred the pork using two forks.
- For the waffles, combine almond flour, coconut flour, baking powder, and shredded cheddar cheese in a bowl.
- In another bowl, whisk together the eggs and melted butter.
- Combine the wet and dry ingredients to form a batter.
- Cook the batter in a preheated waffle iron until golden brown.
- Serve the pulled pork on top of the cornbread waffles.
