Keto BBQ Pulled Pork and Cornbread Waffles[edit | edit source]

  1. Season the pork shoulder with salt and pepper.
  2. Place the pork shoulder, chopped onion, minced garlic, chicken broth, and sugar-free BBQ sauce in a slow cooker.
  3. Cook on low for 8 hours or high for 4 hours.
  4. Once cooked, shred the pork using two forks.
  5. For the waffles, combine almond flour, coconut flour, baking powder, and shredded cheddar cheese in a bowl.
  6. In another bowl, whisk together the eggs and melted butter.
  7. Combine the wet and dry ingredients to form a batter.
  8. Cook the batter in a preheated waffle iron until golden brown.
  9. Serve the pulled pork on top of the cornbread waffles.
