Instant Pot Smothered Pork Chops[edit | edit source]

  1. Turn on the Instant Pot and select the 'Sauté' function. Add the olive oil.
  2. Season the pork chops with salt, pepper, garlic powder, and onion powder.
  3. Once the oil is hot, add the pork chops to the pot. Sauté each side for about 3 minutes, or until browned. Remove the pork chops and set aside.
  4. In the same pot, add the butter, mushrooms, and onions. Sauté until the onions are translucent.
  5. Pour in the chicken broth, making sure to scrape the bottom of the pot to deglaze it.
  6. Return the pork chops to the pot, placing them on top of the onions and mushrooms.
  7. Secure the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high for 10 minutes.
  8. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  9. Remove the pork chops from the pot and set aside. Stir in the heavy cream to the pot to make the sauce.
  10. Serve the pork chops smothered in the creamy mushroom and onion sauce.
