Keto Chocolate Roll Cake is a delicious, low-carb dessert that is perfect for those following a keto diet. This recipe is easy to make and is sure to satisfy your sweet tooth.
Ingredients[edit | edit source]
- 6 eggs
- 1/2 cup erythritol
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/2 cup almond flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup heavy cream
- 1/4 cup unsweetened chocolate
- 1/4 cup butter
Instructions[edit | edit source]
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large bowl, beat the eggs and erythritol together until light and fluffy.
- Add the cocoa powder, vanilla extract, almond flour, salt, and baking powder to the egg mixture. Mix until well combined.
- Pour the batter into a lined baking sheet and spread it out evenly.
- Bake for 15-20 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
- While the cake is cooling, make the filling by heating the heavy cream, unsweetened chocolate, and butter in a saucepan over low heat. Stir until the chocolate is melted and the mixture is smooth.
- Once the cake is cool, spread the filling over the top. Roll the cake up, starting from one of the short ends.
- Chill the cake in the refrigerator for at least 2 hours before serving.
