This is a delicious and easy-to-make keto friendly recipe for Low Carb Scallops with Tarragon Butter. It's a perfect dish for those who are following a low-carb diet or anyone who loves seafood.
Ingredients[edit | edit source]
- 1 lb of scallops
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 4 tablespoons of unsalted butter
- 2 tablespoons of fresh tarragon, chopped
- 1 tablespoon of lemon juice
Instructions[edit | edit source]
- Rinse the scallops and pat them dry with a paper towel.
- Heat the olive oil in a large skillet over medium-high heat.
- Season the scallops with salt and pepper, then add them to the skillet.
- Cook the scallops for about 2 minutes on each side, until they are golden brown.
- Remove the scallops from the skillet and set them aside.
- In the same skillet, melt the butter over medium heat.
- Add the tarragon and lemon juice to the skillet and stir to combine.
- Return the scallops to the skillet and toss them in the tarragon butter to coat.
- Serve the scallops with the tarragon butter drizzled over the top.
