Mini bacon meatballs (recipe) is a keto friendly food item with net carbohydrates of 0-1 per serving.
Recipe instructions
- Preheat oven to 400 8F.
- Use silpat in a baking pan with a lip or oil a broiler pan.
- Cook bacon in a skillet until just starting to crisp, about 4 minutes. Remove and set aside on a paper towel.
- Leave 1 tbs dripping in skillet.
- Saute onion in that skillet over medium heat until softened, about 3 minutes.
- Add garlic and cook another minute.
- Combine ground meat, bacon, onions, bread crumbs, parley, paprika, salt and pepper in a large bowl.
- Stir in beaten egg.
- Form into 1 inch meatballs and place on your prepared pan.
- Bakeuntil fully cooked, about 10 minutes.
- If you want to store them, cool and place on a baking sheet and freeze. Then transfer to an airtight container.
