Pimiento cheese snowball (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.

Recipe instructions

  1. In the bowl of a food processor, combine cheddar, mayonnaise, hot sauce, and garlic. Pulse mixture until ingredients are blended, but cheddar remains coarse. Add cream cheese and pulse until combined.
  2. Add chopped pimientos and pulse 2-3 times, until just incorporated into the mixture.
  3. Line a small bowl with plastic wrap, leaving overhanging edges, and press cheese mixture into the bowl. Cover top with edges of plastic wrap and refrigerate, at least 2 hours and up to overnight.
  4. To serve, turn cheeseball out onto a platter and peel away plastic wrap. Gently press shredded parmesan all over the surface of the cheese ball. Serve with assorted crudites and crackers
