Pimiento cheese snowball (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.

Recipe instructions
- In the bowl of a food processor, combine cheddar, mayonnaise, hot sauce, and garlic. Pulse mixture until ingredients are blended, but cheddar remains coarse. Add cream cheese and pulse until combined.
- Add chopped pimientos and pulse 2-3 times, until just incorporated into the mixture.
- Line a small bowl with plastic wrap, leaving overhanging edges, and press cheese mixture into the bowl. Cover top with edges of plastic wrap and refrigerate, at least 2 hours and up to overnight.
- To serve, turn cheeseball out onto a platter and peel away plastic wrap. Gently press shredded parmesan all over the surface of the cheese ball. Serve with assorted crudites and crackers
