Keto rosemary rounds (recipe) is a keto friendly food item with net carbohydrates of about 1-2 per serving.

Recipe instructions

  1. Heat oven to 350F.
  2. Place parchment paper on two large sheet pans.
  3. Mix all dry ingredients in a food processor until well mixed.
  4. Add whisked egg and mix until incorporated and pea sized.
  5. Place all cheeses into a microwave safe bowl with a lid.
  6. Microwave cheeses on high for 45 seconds, stir and turn over. Microwave an additional 45 seconds until melted.
  7. Place cheese into food processor evenly distributed. Process mixture until well incorporated, about 1-2 minutes.
  8. Remove dough onto pastry board covered with plastic wrap and roll into a long, even cylinder, Cut cylinder into 3 equal pieces.
  9. Set 2 cylinders aside (covered in plastic wrap), roll remaining cylinder a bit longer to shape and cut into 6 equal pieces.
  10. Using your hands or a tortilla press (covered in plastic wrap) flatten dough into a 6 in circle.
  11. Place rounds on the cookie sheet and pierce each one all over with a fork so they don't bubble in the oven.
  12. Bakefor 10-15 minutes until slightly brown. Remove to cool on a wire rack.
  13. Continue making rounds and baking. NOTE: if dough cools too much it will begin crumbling. If so, place dough in microwave oven for 10-20 seconds to rewarm and make pliable again.
  14. Cover rounds in an airtight container. May be kept in the refrigerator for 7 days or in the freezer for several months.
