Lemon ginger vodka (recipe) is a keto friendly food item with net carbohydrates of 0-1 per serving.
Recipe instructions
- wash and then peel the lemon, making sure to remove as little of the white pith as possible, and place the peelings in a large mason jar with a tight fitting lid.
- wash the ginger root and then slice it into relatively thin discs and place them in the jar with the lemon peel.
- pour as much of the vodka over the lemon peel and ginger as your jar will allow and seal it with the lid.
- keep the mixture in a cool dark place, like a pantry or cupboard, and give it a quick shake once a day for about a week.

strain the infused vodka through a few layers of cheesecloth and store it back in the mason jar or in the original vodka bottle.
