Sweet and savory mashed sweet potatoes is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- Preheat the oven to 350.
- Prepare mashed sweet potatoes per package instructions. Set aside.
- Make a pesto using basil, olive oil (or oil of choice), and pine nuts (or a nut of choice). Alternately, use prepared pesto from the store.
- Cook bacon in a pan 6-7 minutes per side. Let it cool, then chop into bits.
- Combine the pesto, bacon, maple syrup and salt and pepper to the mashed sweet potatoes, and place in a baking dish.
- Bakethe potatoes for 20 minutes, or until heated through.
