Recipe instructions

  1. Put the butter and onion into a heavy soup pot. Turn the heat to medium-high and cook to a deep gold. Add the chopped peppers, cooking for thee more minutes, max.
  2. Stir in the chicken thighs, the lime zest, and spices. Season with a liberal quantity of salt, and some pepper.
  3. Do not mind if the find sticks heavily to the pan, it is good for the flavor, particularly in these soups.
  4. Add the dashes of hot sauce and let the soup smoke lightly.
  5. Stir in the chicken stock, add it by degrees, to aid in the scraping up of the suc.
  6. Stir in the tomatoes, black beans, and chilies. Also the lime juice (or you can add it halfway through cooking).
  7. Simmer the soup 15 minutes, or until the chicken thighs are just cooked through.
  8. Remove thighs to a cutting board, and chop or shred, taste them, if they seem under seasoned at all, season them with a little salt, move them around once or twice, and then return to the soup.
  9. Cook over low heat for just a moment if desired, or immediately remove from heat.
  10. Serve in warm bowls with toppings, cheese has a better flavor coarse, lime pieces should not in any way be neglected, their juice, in the soup, is delicious
