Mc's deviled eggs (recipe) is a keto friendly food item with net carbohydrates of about 1-2 per serving.
Recipe instructions
- Special equipment: 1 pastry bag, fitted with 1/2-inch star tip & a salt shaker filled with ground paprika.
- In a 3-quart saucepan, cover eggs with cold water by 1 1/2 inches and bring to a rolling boil. Remove from heat and let stand, covered, 15 minutes. Place pan under running cold water for 5 minutes to stop cooking and let stand 5 minutes.
- Peel eggs and halve lengthwise.
- Remove yolks and mash in a bowl with a fork or in a food processor fitted with a steel blade.
- Add mayonnaise, mustard and cayenne and stir with fork or process until smooth.
- Season with salt and pepper to taste.
- Fill pastry bag with yolk mixture and pipe into egg whites.
- Sprinkle with paprika.
- Chill & serve.
