Tomato-artichoke aspic (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- bring tomato juice to boil in medium pot.
- sprinkle gelatin over cold water in a small bowl and let stand 5 minutes.
- add gelatin to tomato juice and stir till gelatin dissolves.
- stir in remaining ingredients except artichokes.
- chill till it reaches the consistency of unbeaten egg whites.
- add artichokes, stir well and pour into oiled mold.
- chill till firm.
- serve with mayonnaise on the side.
