1 minute muffin low carb (recipe) is a keto friendly food item with net carbohydrates of about 1-2 per serving.
Recipe instructions
- In a small bowl, combine flaxmeal, baking powder, egg and salt with a wisk.
- Spray a large custard cup (I used a 4 cup Pyrex measuring cup) with non-stick spray (I used olive oil).
- Pour the batter into the cup. Slip the cup into the microwave and nuke for 1 minute. Make sure the top is nice and dry. If it isn't, nuke for another 5 to 10 seconds. Dump the muffin out onto the counter or a cutting board, bottom-side up, and allow it to dry for a few minutes.
- NOTE: Original recipe called for adding 2 packets of Splenda, 1/4 tsp cinnamon, and a few drops of vanilla extract
