Delicious cucumber dill salad (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.

Recipe instructions

  1. Thinly slice cucumbers and shallot with a mandolin or knife.
  2. If shallot is too strong tasting, soak in water with 1 tsp of sugar for about 10 minutes, then drain.
  3. Add sour cream, lemon juice and zest, dill, olive oil, garlic powder and salt and pepper to a large bowl and mix well with a whisk.
  4. Add cucumbers and shallot.
  5. Toss well to combine.
  6. Chill for at least 1 hour before serving.
