Creole roast turkey (recipe) details

Recipe instructions

  1. Preheat oven to 325.
  2. Combine all ingredients except turkey and stock together to make a creole butter.
  3. Rub creole butter under the skin of turkey and all over turkey as well.
  4. Spoon stuffing of your choice (I use my Jambalaya stuffing) into cavity, packing firmly.
  5. Roast turkey, basting every 20 min, until fully cooked, 165 degrees per the USDA.
  6. Remove from oven. Place on platter. Allow to rest at least 15 mins before carving.
  7. Degrease pan juices.
  8. Put pan juices in a pot and add stock. Bring to a boil.
  9. Boil 5 mins.
