Recipe instructions
- Preheat oven to 325.
- Combine all ingredients except turkey and stock together to make a creole butter.
- Rub creole butter under the skin of turkey and all over turkey as well.
- Spoon stuffing of your choice (I use my Jambalaya stuffing) into cavity, packing firmly.
- Roast turkey, basting every 20 min, until fully cooked, 165 degrees per the USDA.
- Remove from oven. Place on platter. Allow to rest at least 15 mins before carving.
- Degrease pan juices.
- Put pan juices in a pot and add stock. Bring to a boil.
