Baked jalepeno tilapia (recipe) is a keto friendly food item with net carbohydrates of about 1-2 per serving.
Recipe instructions
- Preheat oven to 350 degrees F.
- Lightly spray (1/2 second) 9 x 13 glass baking dish with canola oil spay.
- Place fillets in single layer in baking dish.
- Spray fillets lightly with olive oil spray.
- Dust the fillets evenly with the Lawry's Garlic Salt with Parsley.
- Thinly slice the fresh jalapeno, and lay slices on top of fillets. Choose slices without ribs and seeds (slices from the tip end of the pepper) to keep heat level low. For more heat, use the slices with ribs and seeds in the center.
- Lightly spray the fillets again.
- Sprinkle generously with the dried dill.
- Spray lightly one last time, and place dish in oven.
- Fish is done when it is opaque throughout, around 20 to 25 minutes.
- Serve with jalepenos left on top, or removed for those that can't take the heat! The peppers impart flavor without much heat during cooking.
- Great served with steamed veggies and wild rice.
