Nearly zen (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- Heat a medium saucepan over medium-high heat. Add onion, bell pepper, and garlic; sautv 4 minutes.
- Add curry paste and red pepper to the veggies, mix and heat through, stirring constantly. Stir in broth and coconut milk; bring to a boil. Then reduce heat, and simmer, uncovered, 20 minutes, stirring occasionally.
- Add shrimp, cooking until shrimp are done (opaque).
- Stir in spinach and let rest until spinach wilts.
