Fennel salad (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- Chop up fennel into pieces about an inch long by a quarter inch wide. Put fennel into a gallon of water with 2 T salt for about 15 minutes. While the fennel is brining, put 2 T oil in a sauce pan, add the garlic, then add the chopped onion, and the chopped preserved orange peel. When the onion is translucent, add the wine vinegar, mix, and turn off the heat.
- Drain the fennel.
- Pour the dressing over the chopped fennel and mix it altogether.
- Cool down in the fridge. Then eat.
