Calico bean soup (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.

Recipe instructions

  1. Add beans to a large stockpot and cover completely with water.
  2. Let soak overnight or 8 hours; drain beans.
  3. Use a 6 quart slow cooker.
  4. Add the beans to the insert.
  5. Add the diced onion, tomatoes and garlic.
  6. Stir in the seasoning packet, the broth, and water.
  7. Cover and cook on LOW for 7-10 hours, or until the beans have begun to burst and are bite-tender.
  8. If you'd like to naturally thicken the broth, pulse a few times with a handheld immersion blender, or blend 1 cup of the beans in a traditional blender and then stir back in the pot.
  9. Taste and adjust seasoning with salt and pepper.
