Perfect green beans (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.

Recipe instructions

  1. Prepare beans by rinsing them and cutting off stems.
  2. Boil water and add salt.
  3. Prepare a large bowl with very cold water and ice.
  4. Add beans to boiling water and stir frequently.
  5. Cook beans approximately 6-10 minutes. I babysit mine to achieve the perfect balance between cooked and still crunchy.
  6. Remove beans and immediately place in ice water to blanche.
  7. Warm sautv pan over medium heat with olive oil and minced garlic.
  8. Add onions and mushrooms and cook approximately 2-3 minutes.
  9. Remove beans from ice water, pat dry and add to sautv pan. Stir frequently to coat the beans in the oil and garlic and to mix mushroom and onion.
  10. Add pepper to taste and additional salt if desired.
  11. Saute' beans for approximately 5 mins or until warm.
  12. Serve immediately.
