Recipe instructions

  1. Step 1.
  2. Preheat oven to 350o F. Grease the inside the muffin tins with little oil.
  3. Step 2.
  4. Fill each muffin tin th to 1/3rd full with vegetables of choice.
  5. Step 3.
  6. In medium bowl, whisk together egg whites and curd. Fill each muffin to the top with egg mixture, pouring over the vegetables already in each tin.
  7. Step 4.
  8. Bakefor 20-30 minutes or until risen and slightly golden on top.
  9. Step 5.
  10. Let cool for a few minutes, then remove from tin.
