Recipe instructions
- Step 1.
- Preheat oven to 350o F. Grease the inside the muffin tins with little oil.
- Step 2.
- Fill each muffin tin th to 1/3rd full with vegetables of choice.
- Step 3.
- In medium bowl, whisk together egg whites and curd. Fill each muffin to the top with egg mixture, pouring over the vegetables already in each tin.
- Step 4.
- Bakefor 20-30 minutes or until risen and slightly golden on top.
- Step 5.
- Let cool for a few minutes, then remove from tin.
