Cranberry english muffin for one (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- Spray a large microwave safe mug with non stick spray. Place almond flour, coconut flour, baking powder and salt in the mug, and stir with a spoon until well mixed.
- Add applesauce, egg and almond milk and stir until well mixed.
- Stir in dried cranberries, then sprinkle a few more on top.
- Microwave on high for about 4 minutes, or until set.
- When you're ready, toast in a toaster oven then eat. This is likely too crumbly for a toaster but is great in a toaster oven.
