Recipe instructions

  1. Preheat oven to 400 8F Spray muffin tins with cooking spray.
  2. Mix together oil, eggs, banana, vanilla and salt.
  3. Add coconut flour, Salba seeds, shredded coconut, cinnamon and baking powder and whisk together until smooth.
  4. Fold in raisins, if using-I did not.
  5. Pour into muffin cups. Bake15 minutes or until toothpick inserted in the center of muffins comes out clean. I had to bakeabout 5 minutes longer.
