Mushrooms stuffed with spinach, quinoa and blue cheese (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.

Recipe instructions

  1. In large skillet, cook mushroom stems, onions, salt and pepper until vegetables are softened. Transfer to a bowl and let cool.
  2. To the onions, add quinoa, spinach, cheese and nutmeg, stirring until combined.
  3. Arrange mushroom caps in a single layer. Divide spinach mixture among mushrooms.
  4. Bakeat 350 for 18-22 minutes. Let cool 5 minutes before serving.
