Spinach and artichoke dip (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- Preheat oven to 350 degrees Fahrenheit.
- Place cottage cheese, Parmesan cheese, and cream cheese into a food processor or blender until thoroughly combined and there are no noticeable curds.
- Combine spinach, artichokes, garlic, and the cheese mixture in a large mixing bowl. (I do this step using my hands..
- Add Salt and Pepper to taste. You won't need much salt as the Parmesan is naturally salty.
- Place mixture into an oven safe baking dish.
- Sprinkle reserved cheddar cheese on top.
- Bakefor about 20 minutes, until the cheese has melted and the dip is warm throughout. A slight golden crust at the edge of the dish is fine.
- Let stand for 5 minutes.
- Serve with your favorite crackers, veggie sticks, etc -- .
