Lemony marinated beets (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- Place beets on baking sheet and bakefor 1 hour, until tender.
- Let beets cool until just cool enough to handle, then rub off skins.
- Cut of ends of beets and cut into inch slices. Transfer to a bowl.
- In food processor, process lemon juice, parsley, vinegar, garlic, cumin, oregano, salt and pepper to taste until smooth. Slowly add olive oil.
- Pour over beets and toss well. Cover and refrigerate for at least 3 hours before serving, or up to 3 days.
