Classic winter melon & fish ball soup (recipe) is a keto friendly food item with net carbohydrates of about 1-2 per serving.

Recipe instructions

  1. 1. If using dried mushrooms, soak in cold water for 3 hours ahead of cooking. Wash any dirt off and cut off the stems.
  2. 2. Wash winter melon and cut out seeded inside and skin. Cube into 1/2 inch sides.
  3. 3. Boil chicken stock in 5 quart stock pot on high heat with lid on. Add dash of white pepper. Reduce to medium high heat.
  4. 4. Add mushrooms and allow to cook for 5 minutes.
  5. 5. Add fish balls and allow to cook for 20 minutes.
  6. 6. Bring heat to medium low and add cubed winter melon. Allow to cook for 10 minutes or until translucent.
  7. 7. Serve hot.
