Classic winter melon & fish ball soup (recipe) is a keto friendly food item with net carbohydrates of about 1-2 per serving.
Recipe instructions
- 1. If using dried mushrooms, soak in cold water for 3 hours ahead of cooking. Wash any dirt off and cut off the stems.
- 2. Wash winter melon and cut out seeded inside and skin. Cube into 1/2 inch sides.
- 3. Boil chicken stock in 5 quart stock pot on high heat with lid on. Add dash of white pepper. Reduce to medium high heat.
- 4. Add mushrooms and allow to cook for 5 minutes.
- 5. Add fish balls and allow to cook for 20 minutes.
- 6. Bring heat to medium low and add cubed winter melon. Allow to cook for 10 minutes or until translucent.

7. Serve hot.
