  1. dissolve the salt in the water over a lowq heat.
  2. add the anchovies to the salted water with the oregano and wine.
  3. simmer gently for 20 minutes and the leave to cool.
  4. strain the garum through a fine sieve or muslin cloth and store in a jar ready for use.
