Recipe instructions

  1. Par boil the quinoa for about half of the cooking time until soft but still with some texture to it. Drain any leftover water.
  2. Zest and juice the lime. Chop the garlic, sun-dried tomatoes and the chili as chunky or fine as you would like them. I prefer to finely chop the garlic and chili, and have the sun-dried tomatoes a bit chunky.
  3. Mix all the ingredients together in a small mixing bowl.
  4. Add salt and pepper to taste, and let sit for about 30 minute.
