Recipe instructions
- Par boil the quinoa for about half of the cooking time until soft but still with some texture to it. Drain any leftover water.
- Zest and juice the lime. Chop the garlic, sun-dried tomatoes and the chili as chunky or fine as you would like them. I prefer to finely chop the garlic and chili, and have the sun-dried tomatoes a bit chunky.
- Mix all the ingredients together in a small mixing bowl.
- Add salt and pepper to taste, and let sit for about 30 minute.
