Baked spinach (recipe)


  1. Wash spinach to remove any sand.
  2. Place spinach in a vegetable steamer over boiling water.
  3. Cover and steam for about 6 minutes.
  4. Remove from steamer, dice into 1/2\ pieces and set aside.
  5. Heat olive oil and butter in nonstick pan.
  6. Add onion, garlic and prosciutto to pan, cook at a low heat until onion is well cooked and a light brown in color.
  7. Add spinach to pan, reduce heat to lowest setting and simmer for 5 minutes.
  8. Remove from heat.
  9. Beat eggs with cream, salt and pepper.
  10. Lightly oil (or spray with pam) an 8\ square baking dish.
  11. Add the spinach mixture and parmesan cheese to eggs.
  12. Pour into baking dish and bakefor 30 minutes at 350 degrees F.
  13. Cut into 4 squares.
