Chilaquiles (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- Saute onion and garlic in oil until onion is clear.
- Add tomatoes and salt and pepper to taste. Simmer 10 minutes.
- Remove seeds from chiles and slice into 4 inch strips.
- Cut tortillas into triangles and fry in hot oil until crisp. Drain. Place half of the tortilla chips in a 9 x 13 inch baking dish.
- Layer tomato mixture, chiles and cheese. Make a second layer of each, ending with the cheese.
- Heat in oven at 350 degrees for 30 minutes or until bubbling and the cheese is melted. Remove from oven and top with sour cream.

Place under broiler for a few minutes until lightly browned. Serve hot.
