Roast tomato salad (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.

Recipe instructions

  1. Heat oven to 180C/350 8F.
  2. Put all the ingredients into a mixing bowl and toss to coat.
  3. Tip out onto a roasting tray.
  4. Season with salt and pepper.
  5. Roast for 5-8 minutes until tomatoes are soft.
  6. Remove and let cool to room temperature.
  7. Serve.
