Bubbe's vegetarian refried beans (recipe) is a keto friendly food item with net carbohydrates of about 3-5 per serving.
Recipe instructions
- Cook beans in water until tender then mashed them up.
- Meanwhile saute the onions, garlic, bell peppers until tender, then add the herbs & spices and saute for a few more minutes. Sauting the spices really brings out the flavor. Then add the whole mixture to the cooked & mashed beans and mix thoroughly . Then add the salt, butter or coconut oil and mix well.
- These are great as a dip with tortilla chips, or used in double decker tacos, burritos etc. Also they freeze reasonably well -- I get a lot of requests for this recipe which I have used for nearly 40 years now. Be forewarned! Taking some Beano may be a good idea especially if you plan to go to a social event later! LOL
