Basil nut chicken (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- In the bowl of a food processor, combine mustard, red wine, basil and egg yolk. Process for 30 seconds. Scrape sides of bowl and process again. With motor running, slowly dribble in olive oil. Drop in walnuts and turn off machine.
- Poach chicken breasts in a mixture of half water, half white wine. When cool enough to handle, tear into irregular pieces.
- Combine chicken, red onion, and green beans with the dressing. Serve slightly warm to room temperature.
