Roasted chicken for amanda (recipe) is a keto friendly food item with net carbohydrates of 0-1 per serving.
Recipe instructions
- Preheat oven to 375 8F.
- Remove giblets and neck if included.
- Rinse and pat dry chicken.
- Rub with olive oil and sprinkle lemon pepper all over.
- Place quarters of onion in cavity with 2 sprigs of rosemary.
- Strip the remaining sprigs of rosemary and sprinkle over chicken.
- Place in a roasting bag, secure and vent in several places.
- (Or -- roast in shallow, uncovered pan for 50 minutes and cover loosely for remainder of cook).
- Place on shallow roasting or casserole dish and place in oven.
- Roast until 170 F in the breast or about 80 to 90 minutes.
- Rest the chicken for 20 minutes before slicing.
