Recipe instructions

  1. Sprinkle lemon juice, black pepper and 1 teaspoon salt on both sides of fish.
  2. Let stand at room temperature 15 minutes.
  3. Heat 3 tablespoons oil in a heavy skillet over medium heat.
  4. Add onions and cook, stirring, until golden brown and soft, 7-8 minutes.
  5. Stir in red pepper, turmeric, ground coriander and remaining salt.
  6. Cook for 30 seconds.
  7. Stir in tomatoes and 2 tablespoons cilantro.
  8. Remove and set aside.
  9. Add remaining oil to skillet, tipping pan to coat evenly.
  10. Add fish and top each piece with tomato mixture.
  11. Sprinkle with garam masala.
  12. Cover tightly, reduce heat to low, and cook until halibut is cooked through, 8-10 minutes.
  13. Sprinkle remaining cilantro on top.
