Cracked-pepper steak with yogurt-lime sauce and lemon couscous (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- Preheat broiler. Score both sides of steak in a diamond pattern by making shallow diagonal cuts at 1-inch intervals.
- In a small bowl, combine black pepper, garlic powder, sea salt and sugar. Sprinkle evenly over both sides of steak; rub in as much as you can with your fingers. Let stand, covered for 10 minutes. Rub in the remaining mixture.
- Meanwhile, prepare Yogurt-Lime Sauce; cover and chill until serving time. In a small bowl combine 1 cup plain low-fat yogurt, 1 Tbs toasted sesame oil, 2 tsp finely chopped crystallized ginger, 1 tsp finely shredded lime peel, 1/4 tsp ground cinnamon and 1/8 tsp salt. Makes about 1 cup sauce.
- Place steak on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 9 to 10 minutes for rare doneness (130) or 11 to 12 minutes for medium rare (145), turning once. Remove from heat; let stand 10 minutes.
- Meanwhile, prepare Lemon Couscous: In a medium saucepan, bring 2 cups water or vegetable broth, 1 tsp finely shredded lemon peel, 2 Tbs lemon juice, 2 Tbs olive oil or butter, 1 clove minced garlic, 1/2 tsp salt and 1/4 tsp black pepper to boiling. Stir in 1 10-oz package couscous. Remove from heat; let stand for 5 minutes, or until liquid is absorbed. With a fork, lightly fluff couscous.

Thinly slice steak across the grain and serve with Yogurt-Lime Sauce and Lemon Couscous.
