One minute hollandaise sauce (recipe)


  1. Melt butter in small measuring cup in microwave.
  2. In a separate bowl whisk together egg yolks, lemon juice, milk and S&P if using.
  3. Slowly whisk in melted butter a bit at a time to egg yolk mixture.
  4. Cook in microwave on medium heat, VERY important to whisk every 15 seconds for one minute or until done.
  5. Serve immediately.
  6. (for a more savoury dish substitute red wine vinegar for lemon juice and sprinkle in dried tarragon - chicken yumminess).
