Primal baked cauliflower (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.
Recipe instructions
- In a microwave safe bowl, microwave the cauliflower pieces until tender (approximately 6 minutes on high). Do not use any water when you microwave.
- Lay out a dish towel in your sink. Pour the cauliflower onto the dish towel. Take the corners and, gripping tightly, twist the dish towel to drain as much water/moisture from the cauliflower as you can. When you can't drain any more water from the cauliflower, pour the cauliflower pieces into a food processor.
- Turn on and preheat oven to 400 degrees F.
- Process cauliflower until smooth. Add yogurt, sour cream and butter and process until creamy and smooth.
- Mix cheese, chives, black pepper, bacon bits and garlic together in a medium bowl.
- Pour pureed cauliflower into the medium bowl and combine.
- Fill a baking dish coated with cooking spray with the cauliflower mixture.
- Bakein the oven on middle rack for 15 minutes. While the cauliflower is baking, mix the olive oil and grated parmesan cheese together. When the 15 minutes are up, remove the baking dish from the oven and spread the oil/cheese mixture across the top.

Switch the oven to broil and brown the cauliflower until the top looks golden brown. Serve hot.
