Buffalo chicken croquettes (recipe) is a keto friendly food item with net carbohydrates of about 4-5 per serving.

Recipe instructions

  1. Place cracker crumbs in a large bowl and set to the side.
  2. Cut up and dice chicken breasts into small pieces and put in a large bowl.
  3. Add the cream cheese and remaining ingredients to the chicken and mix well and refrigerate for about 30 minutes.
  4. Heat cooking oil to about 350 to 375 degrees in a 4 quart sauce pan. (Probably an older one you don't mind frying in -- ) If you have a deep fryer with a basket then excellent but who has that? LOL.
  5. With a regular spoon scoop out enough mixture to make a 1 1/2 inch ball and dip into the cracker crumbs and cover completely with crumbs. Then gently drop in hot oil until golden brown( about 2 to 3 minutes..
  6. Remove from hot oil and place on vented pan with paper towels to drain oil.
  7. Let cool about 5 minutes and enjoy!.
