Roasted pepper cheese dip (recipe) is a keto friendly food item with net carbohydrates of about 1-2 per serving.
Recipe instructions
- Preheat boiler.
- cut bell peppers in half lengthwise, discard seeds and membranes. Place peppers skin side up on foil lined baking sheet; flatten with hand. Add garlic to baking sheet, and broil 4 minutes Turn garlic over and broil 4 minutes or until blackened. Remove garlic from baking sheet, set aside. Contine to broil peppers an additional 2 mins or until blackened. Place peppers in a zip top plastic bag and seal, let stand 15 mins, Peel peppers and garlic and discard skin.
- Place roasted peppers and garlic in food processor; process until smooth, scraping sides of bowl once. Add cheese; process until smooth. Spoon mixture into a bowl and stir in vinegar, salt, and crushed red peppers. Serve immediately or cover and chill
