Father's favorite fish fillets! (recipe) is a keto friendly food item with net carbohydrates of about 1-2 per serving.
Recipe instructions
- Combine sauce ingredients in a microwave safe bowl and nuke until melted. Stir to combine and set aside. Heat oven to 350 8F Lightly salt and pepper fish and sprinkle with old bay on both sides. Spray bottom of oven proof casserole, large enough to hold fillets. Place fish into casserole and cover with bacon strips and pour over HALF of butter sauce. Bakefor 20 minutes. Less time for thinner fillets.
- NOTE: I buy Wild caught frozen Cod Loins at Sam's Club. They are each about the size of a hot dog bun.
-
Remove from oven after 20 minutes and place tomato slices over the top. Sprinkle with cheese ( I have also used shredded Parmesan)and pour over remaining butter sauce. Turn oven to broil and place back in oven at least 6 inches from heat source. Broil until top bubbles and cheese is melted.
