Recipe instructions

  1. Mix the ricotta with the salt in a bowl.
  2. Transfer to a very fine sieve set over a mixing bowl and keep all night, or place on a double layer of cheesecloth and tie up, over a rolling pin or wooden dowel, so that the base of the cloth can hang freely, by a couple of inches, over a stand mixer bowl, or spaghetti pot, of adequate size.
  3. Keep overnight at room temperature, or chill, if you feel obliged.
  4. The next day, mix all remaining ingredients well with a wooden spoon, use at room temperature, will keep several days if chilled well
