Chicken breast w/proscuitto, roasted asparagus, artichoke hearts (recipe) details

Recipe instructions

  1. Preheat oven at 400 degrees F. (I use my toaster oven..
  2. Wash asparagus. Pat dry with paper towel. Line baking sheet with tin foil and spread asparagus single layer on the sheet. Drizzle with 1 Tbs of EVOO and sprinkle with sea salt/kosher salt. Place in preheated oven for 10 minutes.
  3. While waiting for asparagus to roast, pound out 2 chicken breasts to 1/2 inch thick.
  4. When asparagus is done, remove from baking sheet and place chicken breasts on same sheet. Layer prosciutto, artichoke hearts and roasted asparagus on top of each chicken breast. Bakeat 400 degrees F for 12 minutes.
  5. Remove baking sheet from oven and split equal amount of feta on both breasts.
  6. Set oven to Broil. Put sheet bakein oven for 10 minutes to brown cheese.
  7. Remove from oven and serve.
